Our weekend was filled with lounging/playing and eating some yummy food.
Saturday night I made chicken flautas...the same ones I made for the NewYears Eve party.
Although this time I decided to make them at the last minute, so I used what I had in my fridge instead of some of the same ingredients I used when I made them for the party.
They still turned out yummy.
When I made them the first time I used quesadilla melting cheese and diced jalapenos but everything else was the same.
This time around I used cheddar cheese and red, orange, and yellow peppers.
The trick to making them "flautas" is to cover the outside of the flour tortillas with either olive oil or cooking spray before you put them in the oven.
Doing that makes the tortilla crispy.
With some spanish rice and sour cream it made for a delicious dinner!
Last night Joey had the awesome idea to go to sushi for dinner.
We hadn't been in little while, so I was super excited.
We went to a place called Sushi Koma and boy did we leave in one!
It was a cute little, and I mean little, restaurant with cool eclectic decor.
I would definitely call it a whole in the wall with probably the best sushi I've had.
The best part was that Jojo chowed on the fish!
