A Recipe + The Weekend

This past week I made one of my favorite (and easiest) recipes for dinner one night. 
It's my favorite for three reasons: it's my mom's recipe, its delicious, and it makes tons of leftovers!

CHICKEN ENCHILADA CASSEROLE

1 large rotisserie chicken
sour cream (16 oz container)
1 can of sweet corn 
1 can green enchilada sauce
1 can cream of chicken soup
1/2 yellow onion (chopped)
2 med. bags of cheese (shredded)
1 bag corn tortillas

Shred the rotisserie chicken into a bowl. In a separate bowl mix the sour cream, enchilada sauce, cream of chicken soup, onion, and corn together. Then in a 9x13 baking dish layer:

+sour cream mixture
+tortillas
+chicken
+cheese

I usually can do two rounds of the layering. 

Last, bake it in the oven on 350 degrees for 45 minutes.



This weekend was pretty mellow, however, on Saturday morning the kids and I took Joey's car in to get an oil change. Two and half hours, a free donut, some coffee, and two big bumps on Bellamy's head later the car was finished. 



























Then on Sunday morning I met up with two of my good friends from high school at the park. We all have kids now, which is so fun!

Baby Hendrix was there too, but he's only 4 months old and couldn't really hang with the kids in the rocks or share goldfish crackers. :)

Tomorrow we are headed to the new Container Park that's downtown with my friend Stef and Baby Hendrix. I've heard so many great things about it, so I'm really excited to go check it out!

Flautas + Sushi

Our weekend was filled with lounging/playing and eating some yummy food.

 Saturday night I made chicken flautas...the same ones I made for the NewYears Eve party.
Although this time I decided to make them at the last minute, so I used what I had in my fridge instead of some of the same ingredients I used when I made them for the party. 
They still turned out yummy.


When I made them the first time I used quesadilla melting cheese and diced jalapenos but everything else was the same. 
This time around I used cheddar cheese and red, orange, and yellow peppers.
The trick to making them "flautas" is to cover the outside of the flour tortillas with either olive oil or  cooking spray before you put them in the oven.
Doing that makes the tortilla crispy.


With some spanish rice and sour cream it made for a delicious dinner!

Last night Joey had the awesome idea to go to sushi for dinner.
We hadn't been in little while, so I was super excited.
We went to a place called Sushi Koma and boy did we leave in one!
It was a cute little, and I mean little, restaurant with cool eclectic decor. 
 I would definitely call it a whole in the wall with probably the best sushi I've had.
The best part was that Jojo chowed on the fish! 
{Bellamy played it safe with their delicious teriyaki chicken and rice.}






Recipe Rut - Kale, spicy sausage, & potato soup

I have a hard time thinking outside the box when it comes to cooking.

I get into a recipe rut.

Each week I usually cook the same dishes with an occasional new one here and there. 

With it being a new year I have decided to get out of my recipe rut and start consistently trying new recipes I find on Pinterest, hear from friends, find online or maybe even create myself! 

I'm excited about this new journey and will be sharing what I cook with you!

Last night I made a kale, sausage, and potato soup. My cousin Natalie made it for us when she came to visit in the beginning of December. It's super yummy!

I had some help from my tiny chef.


One mishap I had while cooking this was that I didn't have enough chicken stock, so I added some chicken broth to make up for it. 
As you can see in the last picture the broth looks yellow and greasy. 
When Natalie made it she used all stock and the soup was a nice creamy white color... you had a little bit of heavy cream at the end to finish it off.
Oh well. 
It still tasted pretty much the same!

After I took this picture I added some shredded parmesan cheese on top and side of bread...delish!
